The beauty of 'b' is DSSS. There's lots to contend with in the 2.4Ghz band (including phones, microwave ovens, other non-802.11b hardware, even Bluetooth). But DSSS seems to be very noise tolerant in the 'real world'. And if there's just too much noise, you've got 11 channels to pick from. Same thing with phones; they'll auto-sense to find an open channel (well, the most open channel ;) before transmitting.
Don't worry so much about noise. We're using it on a wide scale, in production, and are quite happy with it...

Warning!!! 2.4 Ghz Phones
Everyone fails to mention the disruption of a Airport network with a 2.4 Ghz Cordless phone...NO one addresses this professionally, and the problem has only just begun. Where are the solutions? Where is the feedback? I am starting to believe that the FCC, APPLe, LUcent, and whoever is trying to sweep this MAJOR problem under the carpet while companies like Panasonic sell thousands, peerhaps millions of 2.4 Ghz cordless phones, witn prices dropping. Where are you tech?
