I don't think System 7 had window shades though. Eghh, close enough! Played lots and lots of Tetris for nostalgia's sake.
Hard to say. The look definitely is more 6ish, but that's because they're emulating 7 on a b&w (that's black & white, not blue & white) mac. Although the version of MacWrite they show is like v1.0 of that, so they're mixing genres.
Of course, I could just plug in my PowerMac 7100 for System 7 goodness (or my Classic for System 6 goodness, or my FatMac for 3.x goodness) or dig up my 128K for some 1.0 goodness.
It didn't have it built-in, but there was a control panel to do this. It was called WindowShade, which Apple bought and hacked into the OS itself in v7.5. (Ahh, v7.5, basically v7.1 with 18 add-ons that were once shareware add-ons).
Is there a shortage of Mac SE machines? I've still got mine, ready to go.

Ah... the good old days. It was 1998 and I just dropped $3,000 on a "student priced" Mac SE with a--wait for it--40 MB hard drive! Oh how I loved playing Prince of Persia, Sim City and Wizardry on that little beast! I even had a 1,400 baud Hayes modem, with which I was able to hook into my local university's BBS. I even registered for classes online!
Just think what three grand would buy you now!
Not 1998! I think the three grand included a printer and some basic productivity software.
