There's a description of how to do this from the Finder in Rob Griffith's book "Mac OS X Hints, Jaguar Edition." O'Reilly was kind enough to post an excerpt explaining how to burn multi-session CDs at:

So there is more than one way to do it. Thats OK isn't it? I can also tell you how to do it from the command line as well as through disk copy, but that doesn't mean that people wouldn't rather use a separate program like this. But you're not technically correct, you can't do it from the finder, you have 4 or 5 steps to walk through in Disk Copy.
I'm coping old tapes to cds and wonder if I can burn multiple sessions via OS X via itunes?

Actually, you can burn multiple sessions from the built in burn from the finder. Look around osxhints.com or the apple tech notes.
