META/DMA has released Layer Splitter 2.1, an upgrade to the $50 utility that takes a layered Photoshop or Illustrator file and separates each layer to its own file. Version 2.1 adds native OS X support, the ability to split Illustrator v9 and 10 files, Targa output, and more.
